Dear Alex,
You are clear about employee training. But you are not clear why you would like to organise the employee training. For this you need to do the Training Needs Analysis (TNA). For TNA, consider the following parameters:
a) Customer Dissatisfaction
b) Operational failures
c) Report from Performance Appraisal of the employees
d) Organisational issues like conflict etc
e) Vision of your organisation like acquiring certification for ISO, six sigma etc.
f) Career Planning and Succession Planning.

Alex, Suggest you look at the catering establishment and the typical challenges faced in this industry. Also look at the participants what role are they performing at workplace. Anything that can support them to do better is a good topic to take up.
The person who is paying you for the program is the best person who can inform you the difficulties s/he is facing from his staff :-)

Hi Alex,
You can initially have an asses the gap and further plan for the skill requirement based on the competency of the job.Also you can plan for a general topics such as hospitality management, Facilitation, Customer relation Management etc.

Hi Alex,
I suggest its better if you start with common behavioral topics such as team work, time management work life balance or customer focus. These are general programs which are applicable to all levels. Meanwhile, you should start conducting training gap analysis to develop training calendar.

you can talk about the importance of catering, hygiene, inter personal relations, communication skills. A mixture of all these with relevant stories or incidents, group discussion make it interesting.
