But new employee is not agreeing on deduction of PF. What to do now sir? He himself says ignore PF and give me ESI only. What should the employer do?

Employer can not bar any employee with these benefits , employer has to tender form 11(EPF) to all employees to fill, and if previous UAN is present, they are mandatory to participate for membership without ceiling / capping

Sir, Employer is agreed on PF & ESI. Employee not agreed on PF deduction. How should employer handle?

Once UAN is allotted to employee in his past, he can not escape from pf membership / contribution of the establishment which is covered under EPF act

Regarding EPFO: A employees joins the company at the salary of 30000/- per month. He don't have a UAN. Since his salary is more than 15,000/- he is exempt from PF Applicability. But he worked only for 7 days and left the Job and received 7500/- which is less than 15000/-. As his monthly salary is more than 15,000/- but payment made is less than 15,000/- will the PF be applicable for that employee.
