There is a classic statement in Management Science that 'structure follows the strategy of the organisation' (AD Chandler 1962). So it all depends on what is your strategy at this stage. The structure of the organisation has to suit the strategy being adopted.
As a start up, it is better to structure the organisation on functional basis now. The Core functions like production, engineering and then the supporting function like procurement, maintenance and sales could be separated out. Other functions like Finance, HR, Admin could also be there. There is no one structure which suits all the time, as the organisation evolves it has to structure itself.
