In our Organization an employee was absent from monday to sunday will the sunday be included as absent or not, also let me know about casual leave whether they are applicable in the probation period or after confirmation. Please confirm as soon as possible.

You have to consider only the working days of the week as leave of you have weekly off on Sunday or Sat/Sun. If the leave was prefixed and suffixed to holidays or weekly offs then the entire period can be treated as leave.

You please check the states rule on Leave and Holidays in which your organization is operating. If state does not have any rule on Leave and Holidays, you should not mark absent for weekly off i.e. Sunday. As Punjab State rules on Leave and Holidays says no leave will be adjusted against weekly off falls in the intervening period of leave.
As far as Casual leave is concerned normally state rule described 7 days CL in a calendar year. Accordingly you can grant 1 CL after every 52 days even to a probationer.
