Dear all,
I am really confused about this, since i am an Hr in a management company that runs restaurant ,my Boss asked me to put a policy for the tips and to find a fair way to distribute it .This is really confusing coz we have chefs, waiters ,cashiers ......And since tips is to insure prompness so it should be everyone ....
Guys can u help with this .Fairness is my concern

Usualy wat i find in most of the places is a kind of Charity box where all the tips goes in that box and then distributed evenly.
If i can have a better and Clear pictuer on this i can assist you in a better way

Dear raj,
Thank you for ur help.What we do in our restaurant is to collect all the tips(that is given to the waiters) in a box locked and then we will distribute into portions to all the staff in the restaurant
And this is where i am confused ,does the chef deserve as much as the waitress,does the cashier desreve as much as the manager coz we beleive that we should distribute the tips to all of the employee
The restaurant is a fine dining sushi place and people in my country(Lebanon)are generally generous when it comes to tiping

I feel that you can distibute 50% to 75% of the tips evenly and the rest can be distributed according to their Income basis.
Or else you can plan in giving them targets or performance bonus or sumthing like that if possible

Few things come to mind.
-1- Each member of Restaurant is entitled for share in tips because this is a Team effort. When I tip, personally, I am happy from Chef to Cashier to Bartender to Security guy.
-2- Problem is how to distribute. What should be the criteria. Age, Income, Number of Years in Restaurant, etc etc
-3- Ideally some portion should be paid monthly alongwith salary which is like sort of performance bonus plus some amount should go to buy long term benefits like Pension or Medical insurance or annual holiday or Diwali (Festival) gifts etc which can be discussed with each employee before making a decision.
-4- Group comments are invited to understand which is better

Here is a suggestion
Since the quality of service is team work, you need to distribute suggestion card to every customer along with bill. A customer is more interested in three things i.e., quality of the food, service and courteousness. So you clearly mention each and every service rendered that is , taste of the food , courteousness of waiter, appearances of security guy , These guys should be given higher share rest other team members like, cashier, manager should get an equal share. Give rating scale for the services, end of the day distribute the tips to the team members depending upon the points they have earned from rating scale. This is fair distribution; this will also provide a chance to understand the service rendered by the staff.
