Please do in your PC as shown..
Go to Control Panel > Date,Time & language option > Reginal and Language Option > Customize > select Date Tab and change DD-MM-YY option in Short date format.

Go to word document / click insert / click date & time / select the date format you need. Or else, in the excel sheet you need type the full date by adding ' in front of the date. Eg - '13 June 2012

The below step would insert todays date in the required format
1.) Insert any field from the base data field on the Mail merge Template.
2.) Right Click the field and select Edit Field.
3.) Under Categories select the Date & Time Option.
4.) In the Date Time Text Box enter dd-MM-yy
