As per the labour laws in Maharashtra, what should be the interval/ break time should be given to employees who have shift of 9 hours in a day?

As per law, no employee shall work beyond 5 hours without an interval of rest of at least 30 minutes. Therefore, you can have a lunch break after 5 hours.

I believe that your establishment works for 5 days in a week, otherwise, the number of hours permitted per week will exceed 48 hours.

Ok. You can give breaks after 4 hours and 30 minutes and that would be ideal.
