A classic headhunting technique is to find a company's switchboard number (e.g. 777 1000) then wait till out of hours and call every extension from that upwards (777 1001, 777 1002 etc). You'll find people's voicemails and possibly departments, and be able to either leave them a message or call them during the day and headhunt.
